Joining NANRO Next as a mentor, Chef Jun Lee built his career at New York's three-Michelin-starred Per Se and as a founding member of the Michelin-starred Italian fine-dining room Lincoln, before returning to Korea in 2013 to open Soigné. He has held Soigné at two Michelin stars for more than a decade, and today runs it alongside Doughroom, a fresh-pasta project.
Two languages shape his work: "Seoul Cuisine," where French, Italian, and Korean meet on one plate, and the course as an unfolding episode. Long committed to building an ecosystem in which younger chefs can grow alongside him, he joins NANRO Next as a mentor to continue that same work in a new setting.
