Selected as NANRO Next's second Fellow, Chef Sang Jung began cooking in Seoul before moving to Peru more than a decade ago. Today he stands as a senior chef at Central in Lima — named the world's best restaurant on The World's 50 Best Restaurants 2023 — moving between Central and its sister restaurant Mil, perched 3,600 meters above sea level near the Inca ruins of the Sacred Valley. Across different altitudes, climates, and cultures, he tests and reaffirms his own grammar every day.
His voice as a chef is the meeting point on his plate: the discipline of Korean training and the biodiversity of the Andes and Amazon. Having widened, in his own body, the space a Korean chef can occupy at the frontier of world cuisine, he joins NANRO Next as its second Fellow at the moment he steps into what comes next.
