Joining NANRO Next as a mentor, Chef Choi Hyun-Seok is a 30-year veteran who began at La Cucina, moved through Tasty Blvd, served as executive chef at Elbon The Table, and today runs three restaurants together: ChoiDAT, Jungang Gamsokgi, and the vegan dining room Daliya Dining. His roughly 1,000 original creations earned him the nickname "Crazy Chef," and he also teaches the next generation as an adjunct professor of hotel culinary arts at Seoul Modern Vocational College.
He has long held that the role of a leader is to make the call and drive it forward — not to spread the risk across the team. That principle has shaped how he runs his kitchens, and his ambition to give back through the platform he has built in food is what draws him to NANRO Next as a mentor.
